Embrace outdoor entertaining, learn these top BBQ tips and cook like a pro.

Here in the UK, there’s an acceptance that we can, at times, fail to properly embrace the magic that is the barbecue. It’s understandable: our weather is unreliable, and we often have a small window to prepare, which leads to us rushing to our local supermarket to buy packs of highly processed sausages, a bag of salad, and a cheap, disposable grill. However, a proper barbecue this does not make.

 But why barbecue?

For starters, it tastes so much better. Barbecuing imparts a unique and delicious smoky flavour to food that is difficult to replicate with other cooking methods. The combination of wood smoke, spices and marinades adds layers of complexity and depth to the taste of meat, vegetables, and other grilled foods.

 It is also a social activity, bringing people together to gather around the grill, share stories, and enjoy delicious food. The creation of that relaxed, informal atmosphere encourages conversation and camaraderie among friends and family.

 Also, cooking with fire is cool!

Fuel Your Barbecue

If you can, choose lumpwood charcoal, made from high-quality hardwoods, then add wood chips for a specific flavour (oak, apple, cherry, maple etc.). Avoid charcoal that smells of petrol – it will probably have been made using accelerator fluid, which will taint your food.

Equipment

Invest in a quality barbecue grill or smoker that suits your needs and preferences, whether you prefer grilling meat or fish. Whether you prefer charcoal, gas or electric, make sure your equipment is well-maintained and properly calibrated for optimal cooking results. A good, solid pair of tongs and heat-proof gloves are also handy for when you’re in the thick of it.

Preheat

Before cooking, preheat your grill to the appropriate temperature for the food you’re preparing. This ensures even cooking and helps to create those desirable grill marks and caramelisation on your food (yum!).

Temperature – Using a Meat Thermometer

Learn how to control the temperature of your grill or smoker to achieve the desired level of doneness for your meat or fish. Use a combination of direct heat and indirect heat zones to control cooking times and avoid burning or undercooking.

Furthermore, investing in a good meat thermometer is a great idea for monitoring the internal temperature of your food accurately. Not only does this provide the perfect cook, it also ensures everything is safe for consumption.

Ingredients

Start with fresh, high-quality ingredients for your barbecue recipes. Choose well-marbled cuts of meat, fresh veg and high-quality spices and seasonings to enhance flavour. A trip to your local butcher or fishmonger is well worth the extra effort as they can advise you on specific cuts to use and prepare them for you.

Seasoning – Marinate for Extra Flavour

Season your meat and vegetables generously with a tasty rub, marinade, or spice blend before cooking. Allow the seasoning to penetrate the food for added flavour and moisture.

Patience with your Grilling Time

Barbecuing is a slow and steady process, so be patient and avoid the temptation to constantly flip or move your food around. Allow your meat to cook low and slow to develop rich, smoky flavours and tender texture.

Clean

When it comes to regular grill maintenance, you don’t need to use chemicals – just invest in a dedicated cleaning brush to scrape off the charcoaled remains.

Practice

As with most things, practice makes perfect, and once you’ve mastered basic heat control you can really start to experiment using different flavours and techniques such as smoking and injecting meat with flavours (this really is a thing!).

Feast

Most importantly, you will learn to have fun with your barbecue, becoming creative and confident, leaving your guests satisfyingly sated.
